My favorite go-to snack will probably forever be this creamy garlic hummus. I went nearly my whole life without ever even tasting hummus, but now that I know how to whip up this delicious rendition of a timeless classic, it will always be in my top picks of quick, wholesome dishes.
Hummus really pairs well with a lot of different flavors, but also holds its own as a stand alone entree. Better yet, it only contains a few healthy ingredients and is very quick and easy to make. It also is a great dish for experimentation and playing with different flavors and textures.
Ingredients
Tahini
Filtered Water
Lemon Juice
Cumin
Garlic Powder
Salt
Chickpeas/Garbanzo Beans
Extra Virgin Olive Oil
Instructions
#1:
Pour tahini and filtered water into a food processor. Blend these two ingredients until the mixture becomes a lighter cream color that is thin in consistency.
#2:
In a small bowl, squeeze in juice from one whole large lemon and mix in cumin, garlic powder and salt with a fork until well combined.

Pour contents of the small bowl into the food processor with the tahini and blend again.
#4:
Drain the can of chickpeas, rinse, and dump into food processor.
#5:
Turn on food processor and slowly add in olive oil through the opening while the mixture is being blended.

Stop blending after about 15-20 seconds to look at the hummus and determine if you like the consistency.
With the right amount of olive oil, it should be thick and creamy without lumps or grittiness.
Depending on how thin or thick you want the consistency, add more olive oil to thin it out or use less oil to keep it thicker.
Also at this point, taste the hummus to see if you like the flavor and determine if you want to add more seasonings or lemon juice. If you add more of these, give the hummus a quick blend to incorporate it into the entire mixture.

Pour out hummus into a glass or ceramic storage container and top with an extra drizzling of olive oil. Some other delicious toppings are more lemon juice, fresh garlic, paprika, chopped parsley, etc.
We love to enjoy this hummus with my homemade sourdough tortillas (coming to the blog soon!) as well as our weekly Erev Shabbat dinner of Mediterranean-inspired roasted chicken, veggies and rice.
Hummus was my #1 craving during my first pregnancy and also was the perfect food to help sustain my milk supply during the postpartum period after my girls were born. Full of protein and fat and many of the other good nutrients your body needs during that important re-fueling time.
Totally a “super-food” in my book!
